Yesterday morning brought a trade show called The Smaller Side of SYSCO. An awesome little show featuring local artisanal purveyors and such. White Marble Farms, Maple Leaf Farms, Rain Crown Ranch, and Zarlengo’s Italian Ice & Gelato (and more!) all showed beautiful products that I wanted to order immediately!
There were beautiful Morels, Ramps and Fiddlehead Ferns. Perfect for recipes like Fresh Pasta with Asparagus and Fiddlehead Ferns, Wild Ramp Lemon Risotto, Ramp and Mushroom Tart….. Ferns are great with Brown Butter and Prosciutto, or simply sautéed with Lemon.
Just for fun, here are the ingredients for the Wild Ramp Lemon Risotto (personal fav):
1 quart vegetable stock
3 tablespoons unsalted butter, divided
1 cup sliced ramps, thoroughly cleaned and the white and green parts divided
1 cup carnaroli rice
1/4 cup dry white wine
Juice and zest of 1 lemon
Parmesan Reggiano or Pecorino
Sea salt and fresh black pepper
Go put your apron on, it’s time to cook.
